Cool hand harvested grapesare crushed immediately and the juice left for overnight settling. Cool fermentation of clear juice. Wines left on fine lees until just before preparation for bottling.

Grapes harvested at optimalphenolic ripeness and fermented on skins until dry. Wines pressed to stainless steel vessels for completion of malolactic fermentation. Further maturation after racking also takes place in stainless steel vessels from where wines are prepared for bottling.
